Sometimes I get lazy and make no dinner menu for the week. On those lazy days, I quickly forget what not having a plan causes. I shop with no purpose and end up at the grocery store or market more often than I should to try to keep up with these hungry kids.

So, you’d think I would have learned my lesson after so many years of parenthood right? Well, this week I decided to share my dinner menu plan since it’s hard to come by vegan weekly menu plans. Here’s what I have planned for the week!

Monday: Baked Potatoes topped with Daiya Shreds, Pinto Beans, Vegan Butter, Sour cream, & Broccoli

Tuesday: Taco Tuesday! Boca ground crumbles on fresh corn tortillas with avocado, salsa, tomatoes, and shredded spinach.

Wednesday: Fried Tofu Sandwiches with a side of couscous & steamed peas.

Thursday: Salad Night! (We haven’t had a hearty salad in a while!) Baby spinach, tomatoes, carrots, homemade garbanzos. Topped with Chikin Patties, croutons, and homemade dressing.

Friday: Pizza Night. My boys will have a half pepperoni/half cheese pizza and I will make mine a veggie & Daiya pizza.

Saturday: Western Mac (Haven’t heard of this? It was a recipe my husband introduced to me when we first met. A combo of mac and cheese with “ground beef” corn, & tomato soup) This recipe has been transformed into a vegan version for us and we love it! I may have to add it to the blog soon!

Sunday: Lazy day. We usually eat up any left overs and scavenge on whatever we didn’t finish up during the week while we tackle weekly chores.

Hopefully this week will be a smooth one with the menu planned out! The beans are currently cooking in my crock pot for tonight’s baked potatoes and I’m really looking forward to our yummy salad later in the week! I didn’t include breakfast and lunch because the boys and I usually wing it. We keep staples in the house such as: Cereal, oatmeal, and pancake ingredients for breakfast. Fruits, veggies, nuts, and yogurt for snacks. Bread, nut butters, jelly, soups, ham, cheese, and leftovers for lunches. We eat as we get hungry and don’t really keep a schedule during the day since we hoemeschool and sometimes find ourselves out and about during the day. During the evening however, we like to have dinner with dad when he returns from work! 🙂

What’s does the menu of the week look like for you these days?
