Recently my favorite aunt has sent me text messages about staying healthy during this pregnancy and I love that she takes the time to think about me and this little one I’m carrying. She’s so sweet! One morning she made sure to text me a reminder about how important oatmeal is to our diet. I don’t always crave oatmeal and sometimes I really have to just suck it up and make a bowl despite my laziness haha…

Well, I woke up yesterday craving a warm mug of oatmeal!!! I really wanted to jazz up my regular old cinnamon version a bit. So I decided to use some “scraps” to make myself a more interesting version!

Ingredients:

  • 1/2 c. organic rolled oats
  • 1-2 tbsp pecans (in my case, vanilla roasted pecans from the local farmer’s market) (Chop up these bad boys!)
  • 1 organic apple (diced)
  • 1 small cinnamon stick
  • 1/4 c. soy milk (or any other dairy free milk you prefer)

I cooked my oatmeal according to the package instructions but threw in the cinnamon stick while my water was boiling to add that hint of cinnamon to my oats. Add the diced apples half way through the cooking process to soften them up a bit. Reduce the water content as much as possible and then add your soy milk (about 1/4 cup or so depending on how thick you like your oatmeal.) At this point, if you would like to sweeten your oatmeal, you can! Add a bit of honey or some maple syrup if you please!

I let my oatmeal cool a bit and poured it into my mug, which I then covered in my chopped pecans for a delicious added crunch! This takes about 10 minutes at most in the morning and makes a delicious and nutritious breakfast!
